PITTA PIZZA - MACRO FRIENDLY RECIPES
This Pitta Pizza is one of my absolute favourite recipes at the moment - mostly because it's so customisable, quick and oh, delicious.
Pitta Pizzas are a quick and easy alternative to normal pizza, with the added bonus of being handmade, and macro-friendly! You can recreate your favourite takeaway pizza or just freestyle your own quick and easy, macro-friendly pizza!
All you need is a pitta, cheese, and toppings - then you simply top, grill and enjoy!
I served mine with side salad, but you can serve it with almost anything! These pizzas go amazingly with a side of garlic bread, or roasted vegetables!
What you'll need for my tomato and mushroom pitta pizza:
1 Pitta
60g Grated Mozzarella (can use vegan alternative)
1 mushroom
2 tomatoes
Any other toppings you desire.
Some other toppings ideas: (aka my favourites)
Olives
Sweet peppers
Onions
Jalapenos
Pineapple
Broccoli
Veggie sausages
Veggie Peperami
Spinach
METHOD
1) Warm up the pitta in the grill very lightly
2) Top pitta with grated cheese and vegetables - I do one layer cheese, then vegetables, and then top with more cheese.
3) Grill for a few minutes until cheese melts and crisps at the edges - keep an eye on it and remove at your desired crispiness!
4) Remove from grill, plate up and enjoy!

Today I'm back with a new little series of recipes - starting with my single-serve chocolate protein mug cake! I have a huge sweet tooth and as much as I love indulging in food, sometimes I'm looking for food that tastes indulgent but fits within my macros and aligns with my fitness goals.
This is where my macro-friendly recipes will come in - it's a series of my favourite recipes that are macro-friendly, easy to make and taste absolutely delicious - there are no compromises on taste here! CHOCOLATE PROTEIN MUG CAKE
This protein rich chocolate mug cake is 100% my go-to when I'm craving something indulgent but want something wholesome and protein-rich at the same time! It tastes like a chocolatey banana cake, is high in protein, quick and made from simple household ingredients! Wins all round!
INGREDIENTS
1 egg
1 mashed banana
1 scoop chocolate protein powder (I use Awesome Supplements Choc salted caramel)
1 tsp cocoa powder
½ tsp baking powder
1 pinch salt
METHOD
- Mash the banana and mix with the egg.
- Then add in the protein powder, cocoa powder, baking powder, sweeter, and salt.
- Mix until smooth
- Put in the microwave to cook for 2-4 mins depending on the power of your microwave.
TIPS
I find microwaving for 2 mins gives a softer and fluffier consistency, whereas 3-4 minutes gives a firmer consistency.
I prefer mine microwaved for about 4 minutes, as I prefer it firmer and find it has a more chocolatey taste.
Depending on your protein powder and sweet tooth level (mine is strong) you can also add a bit of sweetener.
I use vegan protein for this recipe, however, if you're using whey protein I'd recommend adding a bit of water or milk to add some moisture, as I found whey makes the recipe quite dry.

Quick summary:
An 100% plant-based restaurant specialising in fast casual dining and organic comfort food. Filled with Instagrammable interiors, located just a stone's throw from Spitalfields market and full of ridiculously mouth-watering food.
Genesis first made its way onto my radar after popping up on my Instagram feed. The instagrammable interior of plush pink sofas, greenery and astronomy inspired branding caught my eye straight away - as well everything on the menu being plant-based and organic! It’s good for the environment, your taste buds, and your health! (and your aesthetic eye)
Obviously, I needed to try this place, so Aycan and I planned one of our vegan friend dates. Spoiler alert, we loved it so much we planned another.

On my first visit, I ordered the original fries, the chorizo wrap, and the chocolate milkshake. A good solid order. The fries were amazing! They are uniquely cooked in avocado oil which gives them a sort of creaminess - which might sound peculiar but it works! The chorizo wrap was quite small as expected but full of seasoning and spice.
On my second visit, I decided to go for the Shawarma and chocolate milkshake again - because it was that good! On our first visit, Aycan tried the Shawarma and it looked delicious. I definitely had a bit of fomo so just had to try it this time.

Vegan Shawarma
Having been vegetarian for a good 10 years now, I’ve never actually tried a traditional meat kebab, so I can't really comment on how this matches up to the 'real thing.’ But I can describe how it tastes from a non-comparative point of view.At first glance it's massive! But once you open it up and start digging in you realised it's even bigger! It felt never ending, so delicious and satisfying. There's a good portion of smashed avocado inside the wrap and a generous serving of Vegan tahini sauce. The proportion of Seitan ‘doner’ to salad was just right - Genesis definitely offer a generous serving of the Seitan doner which is very refreshing indeed. No skimping with the fake meats here! The sauces have quite a bitter taste to them which might be a bit of an acquired taste but I found them super flavourful and delicious with each mouthful.
Milkshake
This is potentially the best milkshake I've ever had! It tastes just like a milkshake version of a kinder bueno but it's vegan! It's priced a bit steeply at £7.00 but it's worth it every once in a while as a luxury.
The Menu
First of all, Genesis is one of the only restaurants I’ve been to where I’ve genuinely been distracted by how good everything looks. As each waiter passes by with another customers order it’s hard to not stare and maybe even salivate a lil bit at how tasty and well crafted each dish looks.Genesis offers a range of fast food classics, from burgers to hot dogs, to other options such as salads and noodles. Drinks from coffee to cocktails to smoothies and even smoothie bowls! And it’s all vegan! There's so much choice that every time I spend a good twenty minutes trying to decide what to order!
What I'm getting in my next order (yes I've already thought about it and yes it took me a good half an hour to decide)
