winter breakfast ideas

Monday 12 March 2018

Breakfasts is the most important meal of the day and also my favourite. There's nothing I enjoy more than waking up to delicious food and enjoying it. I'm always super hungry in the morning and definitely a breakfast person! So today I'm sharing the breakfasts I enjoy the most and find myself turning to in the mornings.

Overnight Oats / Oatmeal

Oats are so good, so good and so versatile.

Oatmeal, and more recently protein oatmeal, is my usual go to, ride or die breakfast. I usually make overnight oats and eat them in the morning. They’re super quick and easy to make with no prep needed in the morning (unless you want to heat them up) You can top with anything, nuts, seeds, fruits depending on how much time and what you’re in the mood for, or you can simply add some spices or flavour to the oatmeal. My favourite combinations are cinnamon with a dollop of jam, and chocolate protein with cacao nibs mmmmmh.

For the cinnamon oats, I simply pour the oats into a bowl, sprinkle as much cinnamon as I'm feeling, add some vanilla extract, some almond milk and then put them straight in the fridge. Sleep and then add the jam in the morning, or just before eating. For the chocolate I pour the oats, cocoa powder, protein powder then mix with almond milk, and some sweetener, if it needs it ( honey, maple syrup etc.) And then straight in the fridge and sprinkle the cacao nibs in the morning.

Nut Butter Toast

Toast with peanut butter is a favourite of mine. Literally just toast bread, spread your fav nut butter, peel a banana, cut it up and put in on top. If you’re not a banana lover don’t worry, you can sprinkle almost anything on your nut butter toast - cacao, chocolate chips, dried fruit, sprinkles, coconut flakes, chia seeds or any other fruit to be honest. I’m always wondering how blueberries would taste on toast? I’m definitely going to try that out.

Vegan Pancakes

I really like this recipe by blogilates

1 cup rolled oats,

1 ripe banana

¾ cup almond mik

2 tablespoons chia seeds

2 teaspoons baking powder

1 tablespoon apple cider vinegar

½ tablespoon cinnamon

½ cup blueberries

2 teaspoons nut butter

Pancakes are the more luxurious, not pressed for time kinda breakfast option. Something you’d make on the weekend, spend some time making them and then enjoying them in a nice relaxed manner.

Waffles

After getting my waffle maker I've been a little bit waffle obsessed. I obviously love to add extra protein to my waffles, but you can make them with any flavour, sweet or savory ones! There’s so much freedom! I've only really made sweet waffles but Aycan opened my mind to the possibility and glory of savoury waffles.I definitely need to try some recipes when I get a second to experiment! I usually use a batter similar to pancake batter and simply but it in my waffle maker, wait two minutes, and then my delicious breakfast is ready to eat. I sometimes add a scoop of ice cream if I’m feeling cheeky, or fresh fruits if I’m in a healthier mood.

Omlette, Seeded bread, and Vegetables

A breakfast for all the savoury foodies out there. This breakfast always feels so wholesome and substantial for when I’m not in the mood for a sweet breakfast. You can substitute the egg for scrambled tofu for a vegan option. It’s a super balanced breakfast with lots of protein from the tofu or eggs, iron from the spinach, and carbs from the bagel or bread. Yum!

Let me know what your favourite breakfast foods are!
